I, like everyone else, was handed down the tradition of cooking. You might think my mom taught me how to cook, but you would be mistaken. My mom was as domestic as a microwave. She would not deny this statement!
Aunt Bea was My Julia Childs
The woman who taught me how to cook and showed me how to present food was my aunt Beatrice. I called her aunt Bea. She knew my parents worked late and extended an offer to come and help cook dinner. It was more than cooking dinner – it was making lifetime of memories.

How a Simple Cake Makes Memories
I know in our busy world, we sometimes do not want to take the time to make a cake from scratch. But it is so worth it! I can tell you from a personal experience how this particular cake makes memories for a lifetime.
My granddaddy, who always stated he did not eat sweets, was caught “Red” handed with his fork in the cake! Here’s what happened.
My cousin had cut a chunk of the cake for to eat on over the next 2 days. To her dismay, our granddaddy got up in middle of the night after everyone had gone to bed to sneak a treat. He found his treat in her chunk of red velvet cake.
This piece could feed three people, and he ate it in one sitting. The next morning, he was caught when my cousin went to get a piece. He confessed, and it became a funny Christmas memory. As we start the holiday season, make sure to create the best memories you can with your family and friends.
Now, let’s get to the cake recipe!
Aunt Bea’s Moist Red Velvet Cake
Ingredients
- 1 1/2 cup Sugar
- 2 Eggs
- 1 tbsp. Cocoa
- 1 tsp. Vanilla
- 2 1/2 cup Cake Flour
- 1 tsp. Vinegar
- 1 cup Shortening
- 2 oz. Red Food Coloring
- 1 cup Buttermilk
- 1 tsp. Baking Soda
- 1 tsp. Salt
Buttercream Icing
- 1 8 oz. Package of Cream Cheese
- 1/2 stick Butter
- 1 box Powdered Sugar
- 1 tsp. Vanilla
- 1/2 cup Chopped Pecans
Instructions
Cake Batter
- Mix sugar, salt and shortening together until fluffy. Add eggs, on at a time; beat well after each addition.
- Mix coloring and cocoa. Add to sugar mixture, beating well. Add buttermilk and flour alternately, beating well after each addition. Mix baking soda and vinegar and fold into mixture.
- Bake in three 9- inch greased and floured pans at 350 degrees for 20 to 25 minutes. The cake is done when it pulls away from the sides of the pan. Do not over bake. Let cake cool in pans or on racks for 10 minutes.
Buttercream Icing
- Cream cheese and butter need to be at room temperature. Mix cream cheese and butter until fluffy and slowly add powder sugar until mixed well, add vanilla and stir in chopped pecans.
